Recipe inspired by Cleverly Simple. Making time to live a healthy life style is hard. My effort to make more good choices is usually a hard and heavy week with lots of gym time and veggies, followed by the mentality that I definitely deserve that late night cookie dough snack. Spoiler alert, this is exactly what my last two weeks were like.
Week of Jan 9th: Went to the gym 3 times. Ate multiple salads and went through the lettuce I purchase in record time. Week of Jan 16th: Went to the gym 0 times. Justified cookie dough and Pinot Grigio as reward for last week's success. (Still haven't been back to the gym) This year I am determined to keep myself out of the unhealthy ruts. No, I don't think I'll ever give them up entirely. But living a healthy life isn't about depriving yourself of the foods and activities that make you happy. Do I feel happy, powerful, and badass when I finish a workout? Heck yeah. Do I also enjoy watching The Bachelor while eating AGR nachos (another recipe for another time)? You bet your ass, I do. Healthy living is about balance. And in order to keep the balance in my diet, I decided to dig out the food processor and make Black Bean Burgers. I'm on a mission to do better this coming week! 1 15oz can black beans 3/4 c bread crumbs (or almond flour) 1 small can of green chiles 1/2 red onion 1/3 c fresh cilantro 1 clove garlic 1/2 t paprika 1/2 t cumin 1/4 t red pepper flakes 1/2 t salt 1/2 t black pepper 1 egg (optional) olive oil for hands
